The Effect of Mechanical Vibration during Transport under Model Conditions on the Shelf-Life, Quality and Physico-Chemical Parameters of Four Apple Cultivars

The study assessed the changes in quality and physical chemical parameters of apples four cultivars (‘Gala’, ‘Idared’, ‘Topaz’, ‘Red Prince’) subjected to mechanical vibration during transport under model conditions after storage (shelf-life). Quality were evaluated based on skin flesh colour, total soluble solids, dry matter, firmness, titratable acidity, pH value, polyphenol content, antioxidant capacity. applied at a frequency 28 Hz caused above parameters, which visible also depended cultivar, but often did not show any clear trend or direction statistically significant. values colour difference factor ?E showed considerable variations only small individual cultivars. Vibration resulted decrease firmness. Variations pH, acidity small, insignificant. Mechanical led an increase content capacity all studied greatest stability relatively high bioactive compounds, observed for Prince’. lowest noted ‘Gala’. analysed continued level treatment, allows conclusion that they remain good source compounds short-term storage.
